WHere is a home-style version of a cocktail from the seasonal menu. This is a party-sized prepared mix which is bursting with tastes of a festive period, making it perfect for a festive gathering. Reserve the remaining citrus syrup to use in morning drinks, sweets, or to make another batch of bikinis.

Bikini Recipe

Makes enough for 10 people

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Put all the ingredients in a saucepan, heat until it reaches a simmer, stirring to dissolve. Then, turn off the heat and leave to reach room temperature entirely. Transfer into an sterilised bottle, close it and refrigerate it chilled, where it will keep for around one month.

Preparing the Batch Mix: Pour all the liquids into a large bottle, let it rest for 60 minutes, then strain best through muslin, making it fully clarified.

For serving: Pour 85ml from the premix to a stirring glass containing ice, and agitate gently for about 60 seconds to chill. Filter into a cold coupe glass or similar, top with some cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
